I · Kitchen

The evening starts cool, moves to the fire and ends in the ashes.

Our menu follows the natural order of a shared table. It opens with small plates, carries on with mains from the fire and closes with a sweet baked in the last heat of the embers.

Kor means ember, the last heat of the fire; defne is the bay leaf drying beside the hearth.

I

Cold starters

Mezze made in the morning, strained yoghurt, fresh herbs and good olive oil. Set in the middle, shared with bread.

II

From the fire

Meat, fish and vegetables over oak embers. Cooking follows the state of the fire; each plate comes when it is ready.

III

Sweets from the ashes

Quince, helva and rice pudding in the last heat of the embers. A calm ending once the fire is down.

III · Principles

Four rules we keep by the fire.

  1. 01

The fire is lit fresh every day

Oak is lit before noon. Service does not start until the embers are ready.

  2. 02

    The menu follows the season

If it is not at the market, it is not on the menu. A dish that runs out leaves the menu that day, on the QR code too.

  3. 03

    Allergens come first

Before ordering we ask everyone at the table about allergies and diet; the note goes to the kitchen in writing.

  4. 04

    Plates are for sharing

Mezze and dishes from the fire go in the middle and arrive one after another as they are ready.

IV · Your evening

From table request to the last glass of tea.

  1. 1

    Table request

Send the day, time and number of guests by form, phone or WhatsApp.

  2. 2

    Confirmation

We check availability and confirm your table by message. A request alone is not a booking.

  3. 3

    Welcome

The QR menu and a printed list are on the table; we talk through allergens with you.

  4. 4

    From fire to table

Plates arrive as the embers allow. Coffee or tea to close, without any rush.

Where can I see the prices?

The current price list is at the entrance and on the QR menu at your table, and we can bring a printed copy. As the menu changes with the season, we do not publish prices on this site.

I have an allergy. How do I order safely?

The menu shows each dish’s allergens as letters, and the filter removes what you need to avoid. Please also tell our team before ordering; the note goes to the kitchen in writing. As we work in one kitchen, we cannot fully rule out traces.

Are there vegetarian and vegan options?

Yes. Vegetarian and vegan dishes are marked on the menu, and the filter can show only those. Where it works, the kitchen cooks with olive oil instead of butter.

What about larger groups or celebrations?

For tables of more than eight, send your request a few days ahead. We plan a sharing menu, the seating and a cake if you wish, together with you.

Do you offer takeaway?

Dishes from the fire are made to be eaten hot at the table, so we do not deliver. Mezze and sweets can be collected from the restaurant.
